Yummy Salad...
THIS is one of my favourite salads.
I have no clue what it’s called or even where I got it from now, but its a staple in our house.
SO - basic ingredients;
1 tin of chickpeas
Cherry or baby plum tomatoes
Spring onions (3-4)
Cucumber
Feta Cheese
Mint
Juice of a lemon
Bit of Olive Oil.
I am shit at quantities. I basically tailor my recipe to the amount of chickpeas. So it’s a tin or carton of chickpeas - give them a rinse and a drain and pop them into a bowl. Add chopped tomatoes (as many as you fancy)- I usually chop them into quarters; Add some cucumber - I chop about 1/3rd of a cucumber into small squares - add more if you fancy. Add your chopped spring onions to the mix 3-4 depending on size. At this point give it a good stir, I like to see that there’s as much cucumber and tomato to chickpeas. Now, I add the lemon juice and a drizzle of olive oil and give it another little siglo.
Here I add the mint - I just use a few teaspoons of mint sauce, but if you want to add fresh mint then I’m sure that would be lush. If it were me, I would chop fresh mint and mix it with the olive oil and lemon juice before adding it.
Mix it in nicely - make sure everything is coated in the mint and NOW, I add the crumbled feta cheese. About half a pack?? As much as you fancy really… and voilà, a lush salad.
It goes great with everything - A nice bit of steak, chicken, baked beetroot tart (recipe to come on this one!). I always make way more than we can eat in one sitting so it’s great to have with a couple of meals!
This recipe will cost £4.67 to make and is full of goodness - I shop at Morrisons and these prices came from there today. - so not only is it bloody lovely, but I can feel smug because it’s actually good for me!!
Tin of Chickpeas - 55p - Full of protein, vitamins, minerals and fibre.
Cherry Toms - 85p - Full of Lycopene, potassium, Vitamins B and E.
Spring Onions - 59p - Great source of Vitamin C and Calcium.
Cucumber 55p - Low in calories, full of water, an official SUPERFOOD!!
Lemon 29p - High in Vitamin C.
Mint Sauce 49p - Fat free, low calories per tsp.
Feta Cheese £1.35 - Compared to other cheeses this is low in calories and fat. Also high in B vitamins and calcium.
